Lemon Sassycakes

Light, fluffy white cakes with a kiss of lemon.

Just the sort of low-fat baked good you're tastebuds will crave after a holiday full of the heavy, sweet stuff. Made as bite-sized cupcakes, they become, somehow, even more irresistable.

Want to know a secret? A wee kitchen accident made for a tasty surprise. Friend, Tahna, delivered an essential oil concoction of lemon, grapfruit, ginger and peppermint for my pantry. It's her "Sassy Water" concentrate, and I've become quite the fan of her home-blended mixture. When I reached for a dash of lemon essential oils for these cuppies, I accidentally put in a splash of her Doterra Sassy Water blend, and by golly, did it make for some good baking.
3 T. butter
1/2 c. applesauce
1 tsp. vanilla
1/4 c. honey
1/2 c. organic sugar
3 egg whites
1 1/2 c. flour
1/2 tsp. baking powder
2 drops ea Lemon, Ginger, Grapefruit and Peppermint Essential oils(add with the honey)
1 lemons zest (grated)

Combine all together in a medium bowl. Spoon into mini cupcake wrappers. Bake for 11-13 minutes.

Lemon Cream-Cheese Frosting

Creamy. Zesty. And so, so simple. Yum.

4 oz. Neufchatel cheese
3 c. powdered sugar
2 t. butter
2 Drops Lemon Essential oil & zest of a lemon

Place all ingredients into a bowl, whip until light and fluffy. Pipe onto cupcakes.

Peppermint Cookies

1 c. butter, softened
3/4 c. sugar
1 egg
3 c. all purpose flour
1/4 tsp. salt
6 drops dōTERRA Peppermint Essential Oil
1/2 c. crushed candy canes
5 tsp. warm water
3/4 c. Icing sugar

 Heat oven to 180 degrees celsius. In medium bowl, beat butter and sugar until light and creamy. Add egg and beat until blended. Stir in flour and salt, then the crushed candy. Add red food coloring to dough if desired. Roll 1 tablespoon of dough into ball. Place on ungreased cookie sheet. Bake cookies 8 to 10 minutes until firm. Cool on sheet for 1 minute. Transfer to wire rack to finish cooling. Mix water and icing sugar together to form icing. Dip top of each cooled cookie in icing (sprinkle with additional crushed candy, if desired) and allow to dry.
Makes approximately 48 cookies.

Peppermint Hot Chocolate

Hot Cocoa or Milo mix
Peppermint sticks (Candy Cane)
2 drops of dōTERRA Peppermint Essential Oil

Prepare hot cocoa the way you normally would, then add peppermint oil (to taste) and mix.
To serve, add a scoop of whipped cream and put a peppermint stick in the middle. Yum

Sweet marjoram oil is also used as a fragrance ingredient in perfumes, cosmetics, soaps and detergents; it is also found in meats, sauces, and seasonings.

Culinary Uses of Marjoram
When cooking with marjoram essential oil, remember that doTERRA oils are in their purest form, which makes them very concentrated. Only a tiny amount is needed to flavor meats, sauces, or seasonings.
When substituting marjoram essential oil for the dried or fresh herb, begin with the toothpick method. Dip a toothpick in the oil and swirl into the sauce until the desired taste is achieved. For larger quantities, one drop of the oil will add plenty of flavor.
